Medium body Junmai Daiginjo Nama Chozo (single pasteurization) Sake from Hyogo prefecture. Its well balanced, very refined taste makes it an excellent match for the whole meal.

 

Thanks to its single pasteurization after bottling (a characteristic of the Hiyashibory series from this producer), most of the fruity aroma is preserved and spreads very intensely. A wine glass is recommended, in order to best appreciate it.

At the palate the taste is deep and smooth, with typical Daiginjo character, enhanced by the small percentage of added alcohol. 

 

This sake can be paired very nicely both to Japanese and Western cuisine.
