This is a rare example of aged Sake.

Produced with a blend of two premium sake rice varieties, Gohyakumangoku and Yukinosei, and Akari Ogawa yeast. The highest water quality is guaranteed by the cold and pure underground water system of the Nakagawa area.

Under well controlled temperature management, this sake is brewed using the Yamahaishikomi technique.  After maturing inside a tank at room temperature for more than one year, it is bottled and aged further inside a cave for several years. This is one of the few aged sake being produced.

Very elegant, you can feel the aged sake aroma softly spreading around your palate. Slightly dry, full bodied, rich umami and creamy taste.

Perfect with aged foods such as Parma ham and Parmesan cheese.

In Japan, it is considered a very special treat for expert connoisseurs, but in Europe it is recommended for beginners too, because of the strong aged taste.
